These simple shredded sprouts are pan fried until tender then tossed with sweet balsamic vinegar and tangy feta cheese.

This is a great side to grilled chicken, lamb or pork.

Ingredients

  • 2 cup brussels sprouts, raw
  • 2 tablespoon feta cheese
  • 1 tablespoon balsamic vinegar
  • 1 ½ tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Remove any outer leaves from the sprouts and discard the tough bases. Thinly slice/shred the sprouts. Heat the olive oil in a skillet over a low/medium heat and add the shredded sprouts. Season with salt and pepper and cook for 5-6 minutes until tender.
  2. Add the balsamic vinegar and stir well to combine. Cook for a minute more.
  3. Crumble in the feta cheese and toss to serve.
