These deliciously simple avocado boats are topped with a light and zesty tuna mayo.
One avocado half serves as a snack in between meals, or you can enjoy two halves served as a lunch portion.
Ingredients
- 1 each avocado
- 2 ounce canned tuna
- 2 small – 3" long scallions
- 1 tablespoon mayonnaise
- 1 teaspoon lime juice, fresh
- 1 tablespoon, chopped cilantro
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Slice the avocado in half lengthways, and remove the stone from the center.
- Finely slice the scallion and add to a mixing bowl along with the tuna, mayonnaise, lime juice, cilantro, salt and pepper. Mix well to combine.
- To serve, divide the tuna mayo evenly between the two avocado halves.
