This is a super fragrant recipe that combines just the right amount of sweet and savory! Plump, jumbo shrimp are coated in a honey and garlic butter sauce, which lay on a bed of rosemary cauliflower rice that has been baked with more butter, parmesan cheese, and lemon zest. This is an excellent hot lunch or good for part of your meal prep!

Ingredients

  • 12 ounce cauliflower rice
  • 2 tablespoon butter
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • 1 teaspoon, chopped garlic
  • 1 gram herbs fresh raw rosemary
  • ¼ teaspoon lemon peel or zest raw
  • 1 tablespoon, shredded parmesan cheese, fresh (hard)
  • 1 tablespoon butter, salted
  • 1 teaspoon honey
  • 1 teaspoon, chopped garlic, fresh
  • 1 teaspoon lemon juice
  • 9 large raw shrimp
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Preheat an oven to 350 degrees and spray a 9×13 baking dish with pan spray. In a bowl, combine the cauliflower rice with the first amount of butter (melted); the first amounts of salt, pepper, and garlic; a small sprig of fresh rosemary; lemon zest; and parmesan cheese.
  2. Pour the cauliflower rice mix into the prepared baking dish and spread it out. Bake the dish, uncovered, for 20 minutes.
  3. While the rice is baking, prepare the shrimp. In a small bowl, melt the second amount of butter. Combine it with the honey, second amount of garlic, and the lemon juice.
  4. Peel and devein your shrimp if necessary. Toss the shrimp in a bowl with a pinch of salt and pepper. Then, toss it with the honey butter sauce you just made.
  5. Pour the shrimp and all their sauce into a small pan over medium heat. Cool the shrimp for about 60 seconds per side – just enough the sear the outsides of the shrimp. Set the pan aside until your rice is done baking.
  6. Once the cauliflower rice has finished its first round of baking, pour the shrimp and all the juice from their pan over the rice. Your can arrange 3 shrimp over each serving of rice like in the photo for an easier serving job later. Bake the dish for a final 10 minutes. Serve while hot with fresh lemon juice!
