For a simple weeknight dinner that you want to pop in the oven and forget about, this dish is perfect! Four chicken breasts are smothered in a creamy topping that’s strongly flavored with fresh basil, parsley, and rosemary. Each bite is very tender and coated in its green topping!

Ingredients

  • 2 ounce spinach, raw
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • 1 ½ pound boneless skinless chicken breast
  • 4 tablespoon mayo
  • 2 clove garlic
  • ½ ounce basil
  • 1 teaspoon herbs fresh raw rosemary
  • 5 sprig parsley

Instructions

  1. Preheat an oven to 350 degrees. Spray an 8X10 baking dish with pan spray. Arrange the spinach in the bottom of the dish. Drizzle the olive oil over the spinach, then sprinkle HALF the salt and pepper over the top.
  2. Prepare the chicken breasts by slicing two large breasts through the middle. You should have four 1-inch thick chicken breast, approximately. Lay the chicken breasts over the spinach and sprinkle the remaining salt and pepper over them.
  3. For the herb topping, combine all the remaining ingredients in a food processor. You should have a smooth, green, fragrant paste.
  4. Spread the herbed mayo topping over the top of each chicken breast, making sure all the exposed edges get covered.
  5. Bake the dish for 35-40 minutes. Enjoy!
