Ingredients
- 1 cup almond butter
- 1 cup the ultimate icing sugar replacement by swerve
- 1 large raw egg
- 2 teaspoon vanilla extract
Instructions
- Preheat an oven to 350 F. Line two baking sheets with parchment paper. Combine all the ingredients in a mixing bowl and mix with a stand mixer or hand mixer until combined.
- Roll into 15 balls and place on the lined baking sheet. I could fit 12 to a sheet. Press the cookies with the tines of a fork in both directions until flattened.
- Bake for 12-14 minutes until cooked through. Allow the cookies to cool completely on the baking sheet before removing.
