An air fryer gives these chicken nuggets the perfect crispiness without having to use any unhealthy oils. But don’t worry, this recipe is still completely Keto in fat content! Fresh-cut, meaty chicken nuggets are coated in a highly seasoned flour coating. Then, they’re dipped in egg and rolled in a spicy pork rind breading. This recipe is very kid-friendly! Make these nuggets as part of lunchtime or let the older children help dredge and bread the nuggets themselves.

How Can I Make This Recipe Less Spicy?

Worried you can’t handle the heat? Don’t worry, you can make some easy adjustments to this recipe to make the heat level to your liking. If you cannot find spicy pork rinds, or don’t want spicy at all, simply use plain pork rinds. If you DO like spicy flavor, simply add extra chili powder or hot paprika to the plain ground pork rinds. To avoid the heat, you can also omit the chili powder or lower the amount in your flour dredge. To cool off the spicy flavor, you can also pair your nuggets with a Keto dipping sauce.

Ingredients

  • 12 ounce raw chicken tenders by foster farms
  • ¼ teaspoon seasoned salt
  • 6 tablespoon paleo baking flour by bob's red mill
  • ¼ teaspoon black pepper
  • ¼ teaspoon lemon pepper seasoning
  • ¼ teaspoon paprika
  • ¼ teaspoon chili powder
  • 1 large raw egg
  • 2 ¼ ounce hot & spicy pork rinds chicharrones by clancy's

Instructions

  1. Prepare approximately 2 chicken tenders per serving by cutting each tender into 3 pieces. The original amount listed in the ingredients should result in 18 pieces. Toss the cut chicken tenders in a large mixing bowl with the seasoned salt. If you cannot find raw chicken tenders in your grocery store, simply slice boneless chicken breast into tenders at home.
  2. Prepare all the breading ingredients. On a plate, combine the paleo flour, black pepper, lemon pepper, paprika, and chili powder. In a small bowl, whisk together the egg. On a second plate, arrange ground pork rinds, which you can pulse into a breading in your food processor. For this recipe, you may wish to add extra paleo flour, egg, and pork rinds to have excess breading materials to work with.
  3. One by one, roll a chicken nugget in the flour mixture. Then, dip it in the egg. Let any excess egg drip off the nugget before rolling in the spicy pork rind mixture. Arrange every breaded chicken nugget on your air fryer trays lined with parchment paper. Preheat your air fryer to 350 degrees and bake for 12 minutes. Flip the nuggets over and bake for an additional 8 minutes before serving. 6 chicken nuggets are suggested per serving.
