You will love these ube flavored cupcakes! The extract makes for such a gorgeous, trendy color. Even better they are keto! Soft, moist and sweet these will sure hit the spot.
Ingredients
- 3 cup almond flour
- 1 cup the ultimate icing sugar replacement by swerve
- 2 teaspoon baking powder
- ¼ teaspoon coarse kosher salt by morton
- ½ cup butter, salted
- 1 teaspoon ube extract by mccormick
- 2 large raw egg
- ½ cup almond milk
- 8 ounce cream cheese
- ¾ cup the ultimate icing sugar replacement by swerve
- ½ teaspoon ube extract by mccormick
- 1 tablespoon heavy cream
Instructions
- Preheat an oven to 350 F. Prepare a cupcake tin by filling it with 12 cupcake liners. Combine the dry ingredients together (almond flour, 1 cup Swerve, baking powder and kosher salt).
- Melt the butter in a microwave safe bowl. Add this to the dry ingredients along with 1 t ube extract and the eggs.
- Mix slightly.
- Heat the almond milk in a heatproof container until hot. Add to the batter and mix well to combine.
- Scoop the batter evenly into the 12 cupcake liners.
- Bake for 25-27 minutes until the cupcakes are puffed, cooked through a slightly browned on top. Remove from the oven and allow to cool in the cupcake tin until completely cooled. Allow to cool before frosting.
- In the meantime, combine room temperature cream cheese, the remaining Swerve, ½ t ube extract, a pinch of salt and 1 tablespoon of heavy cream in the bowl of a stand mixer. Mix for 3-5 minutes until the frosting is light and fluffy. Place in the fridge until ready to use.
- Top each cupcake evenly with frosting and swirl to desired effect!
