If you love the mug biscuit on this site you will love this ham and swiss mug sandwich! You make the mug biscuit in the microwave, then slice it into quarters and top it with canadian bacon and aged swiss cheese! It will make for the loveliest of breakfasts!

Ingredients

  • 1 tablespoon coconut flour
  • 3 tablespoon almond flour
  • ¼ teaspoon baking powder
  • 1 teaspoon the ultimate icing sugar replacement by swerve
  • ⅛ teaspoon coarse kosher salt by morton
  • 1 large raw egg
  • 2 teaspoon avocado oil
  • 2 slice – 2 1/2" diameter x 1/4" canadian bacon
  • 1 slice (from pre-sliced package) – each 3/4 ounce swiss cheese

Instructions

  1. Mix all dry ingredients together (flours, baking powder, Serve and salt) into a heatproof coffee mug.
  2. Add in the wet ingredients (egg and avocado oil). Mix until combined, scraping down the sides. Microwave on HIGH for 1 minute. The biscuit will be puffed.
  3. Remove the biscuit from the mug by running a knife around the edges. Cut biscuit evenly into 4 round circles. Top two of them with one slice of canadian bacon each and ½ of a Swiss cheese slice.
  4. Microwave again for 15-20 seconds until the cheese is melted and then top each with the other rounds to make a sandwich. Enjoy!
