This easy lunch or simple snack has just two components: meatballs and lettuce cups! With each serving being 2 lettuce cups, you can fit them in a meal prep container or enjoy right away with your hands. You can also add toppings like sriracha, keto guacamole, crunchy seaweed strips, or any keto condiment you find appetizing.

Ingredients

  • 1 pound ground pork
  • 1 ½ tablespoon mayo
  • 1 tablespoon almond flour
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • ¼ teaspoon garlic, powder
  • ¼ teaspoon curry powder
  • 1 tablespoon, chopped green onions
  • 6 large leaf boston lettuce

Instructions

  1. Preheat an oven to 375 degrees. In a bowl, mix together all the ingredients except for the lettuce.
  2. Line a sheet tray with parchment paper. Use your hands to form 12, 1 ½ – 2 inch meatballs and arrange them on the tray.
  3. Bake the meatballs for 40 minutes. No flipping necessary! Allow the meatballs to cool for 5+ minutes before moving on to the next step.
  4. Pull the larger, outer leaves from a head of butter lettuce. Rinse, dry, and arrange these leaves on a clean surface.
  5. Fill each lettuce leaf with 2 meatballs, making 6 lettuce cups total.
