This cod dish is baked in foil with aromatic spices and a sweet and tangy marinade.

This would be perfect served alongside cauliflower rice or some stir fried Bok choy.

Ingredients

  • 4 fillet – each 4 ounce raw cod, cooked from fresh
  • 2 teaspoon tamari sauce
  • 2 small – 3" long scallions
  • 1 clove garlic
  • 1 tablespoon, chopped cilantro
  • 1 teaspoon ginger
  • 1 teaspoon lime zest
  • ¼ each – approx 4" – 6" long hot chili peppers, red, raw
  • ½ tablespoon maple flavored syrup by lakanto
  • ½ tablespoon sesame oil
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and lay two large squares of foil on a shallow baking tray. Place two cod steaks on each foil square and season with black pepper.
  2. Finely chop the chili, mince the garlic and grate the ginger. Mix together with the lime zest then sprinkle evenly over the cod steaks.
  3. Mix together the lakanto syrup, tamari sauce and sesame oil in a small bowl. Drizzle this mixture over the cod steaks.
  4. Wrap the foil up around the cod to create a loose parcel.
  5. Transfer to the oven to bake for 15 minutes or until the fish is opaque and entirely cooked through.
  6. Finely slice the scallion and chop the cilantro, scatter over the cod to serve.
