These simple ham and avocado pinwheels are a great option for snacking, lunchboxes or a party appetizer.
Quick and easy to prepare these are ideal for adding an extra boost of healthy fats to your day!
Ingredients
- 3 medium slice – 4 1/4" x 4 1/4" x 1/16" – each 0.75 ounce ham slices
- 2 teaspoon lime juice, fresh
- 1 each avocado
- ½ tablespoon olive oil
- â…› teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Add the avocado to a mixing bowl with the salt, pepper, lime juice and olive oil. Mix together well to combine until as smooth as possible.
- Divide the avocado mixture between the ham slices, spreading to the edges in an even layer.
- Roll the ham slices carefully into tight tubes.
- Use kitchen scissors to cut each tube into 5 even, bite sized portions and refrigerate until ready to serve.
