These simple ham and avocado pinwheels are a great option for snacking, lunchboxes or a party appetizer.

Quick and easy to prepare these are ideal for adding an extra boost of healthy fats to your day!

Ingredients

  • 3 medium slice – 4 1/4" x 4 1/4" x 1/16" – each 0.75 ounce ham slices
  • 2 teaspoon lime juice, fresh
  • 1 each avocado
  • ½ tablespoon olive oil
  • â…› teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Add the avocado to a mixing bowl with the salt, pepper, lime juice and olive oil. Mix together well to combine until as smooth as possible.
  2. Divide the avocado mixture between the ham slices, spreading to the edges in an even layer.
  3. Roll the ham slices carefully into tight tubes.
  4. Use kitchen scissors to cut each tube into 5 even, bite sized portions and refrigerate until ready to serve.
