If you love garlic bread, but you want to leave out the thick toast filled with empty calories, you MUST try this ultra cheesy, keto garlic bread! This makes an excellent side dish to an Italian inspired meal or an appetizer at a group gathering. Enjoy while hot so you can get that ooey, gooey, cheese pull!

Ingredients

  • 1 pound cauliflower, raw
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 2 teaspoon italian seasoning
  • 1 large raw egg
  • â…“ cup, shredded parmesan cheese
  • ½ cup, shredded cheddar cheese
  • ¼ cup, shredded mozzarella cheese

Instructions

  1. Chop a head of cauliflower into florets and toss them in a food processor. Blend until you have very, very fine cauliflower rice.
  2. Place the cauliflower rice in a microwave safe bowl and microwave the cauliflower or 1 ½ – 2 minutes. Let the cauliflower cool until it’s easy to handle.
  3. At this point, preheat an oven to 450 degrees and line a quarter sheet pan with parchment paper. Place the cauliflower rice in a cheese cloth or thin dish towel and squeeze as much liquid as possible out of the cauliflower. Return the liquid-free cauliflower rice to a mixing bowl.
  4. Stir the salt, garlic powder, italian seasoning, egg, and parmesan cheese into the cauliflower. Then, press the mixture into the prepped sheet tray. Make sure the mixture fills all four corners of the tray and press it down.
  5. Bake the tray for 12 minutes. Then, sprinkle the cheddar and mozzarella cheese over the top of the cauliflower (covering all edges).
  6. Bake for an additional 5 minutes. Allow the garlic bread to cool slightly before slicing it into 12 rectangular pieces.
