This mousse is so simple to put together and so perfect for summer. I ate my chilled from the fridge, but I would imagine this would be delicious frozen as a popsicle!

Ingredients

  • 1 ½ cup heavy cream
  • 8 drop stevia liquid
  • 1 envelope, (1 tbsp) gelatin powder
  • 1 ½ tablespoon water
  • 1 cup blackberries
  • ½ teaspoon vanilla extract
  • 1 ounce sliced almonds

Instructions

  1. Chill a whip attachment and mixing bowl in the freezer for 10 minutes. In the meantime, pour the gelatin over the water let bloom for 5 minutes. Microwave on HIGH for 15 seconds until the gelatin melts.
  2. Also be sure the heavy cream is cold. Pour cream into a mixing bowl and whip until it is starting to froth. Then add the stevia drops and vanilla. Then add the gelatin mixture very slowly as you continue to whip the cream. Be sure not to let the gelatin sit out too long or else it will solidify. Continue whipping cream until it forms a stiff peak, meaning the whipped cream stands up straight on the whip attachment when removed from the bowl.
  3. Gently fold in the berries and almonds.
  4. Divide into four 8 oz ramekins and top with extra berries. Place in the fridge until firm.
