These almond crackers are salty and nutty! I love how delicious they are and could be paired with cheese for a snack or marinated olives. They would even make great croutons on top of a salad!
Ingredients
- 1 cup almond flour
- ¼ cup, chopped walnuts
- 1 tablespoon natural foods flax seed meal by now
- ½ teaspoon coarse kosher salt by morton
- 2 tablespoon water
- 1 ½ teaspoon extra virgin olive oil
Instructions
- Preheat an oven to 325 F convection or 350 F conventional. Add the almond flour, walnuts, flax, salt, water and olive oil to a food processor.
- Blend until completely blended and the walnuts are completely incorporated into the dough.
- Dump the dough onto a piece of parchment paper and lay another piece of parchment on top. Press the dough flat with your hands. Then use a rolling pin to roll the dough out very thin (1/16”). It will not be a perfect square.
- Use a pizza cutter to cut the crackers into 1 ½” x 1 ½” pieces. Do not separate them, bake them as is. Slip the parchment paper onto a baking sheet and bake for 15 minutes.
- Remove them from the oven, break them apart, flip them and bake for another 5-7 minutes. The crackers should be lightly golden on each side.
