Ground chorizo is a pre-seasoned pork that can be a little to very spicy, depending on your tolerance to some heat. Pair this protein with cauliflower rice, some nutrient-dense spinach, and cooling cilantro for an easy weekday lunch! Simply double the recipe to have enough meals to last you through the week.
Ingredients
- 2 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper, ground
- ¼ teaspoon onion powder
- ¼ teaspoon garlic, powder
- ¼ teaspoon paprika
- 3 ounce chorizo
- 1 cup, cut pieces cauliflower rice
- 2 tablespoon, chopped coriander leaf, fresh
- 3 ounce spinach
Instructions
- Heat the olive oil in a medium-sized pan over medium heat. Toss in the spinach and coat it in the oil.
- Sprinkle all the dry seasonings over the spinach and stir until the spinach is cooked down and wilted. When done, distribute the spinach between 2 meal prep containers.
- Return your pan to the stovetop, leaving an leftover oil in the pan. Place the raw chorizo in the pan, and cook it through while breaking it up with a spoon.
- Stir in the cauliflower rice. Cook the rice and chorizo on a high heat until the ingredients are cooked through and a golden brown.
- Distribute the chorizo and rice mixture between your 2 meal prep containers, and top off each one with 1 TB of chopped cilantro.
- For serving, at your discretion, you may add additional toppings like avocado, sour cream, or shredded cheese to increase your fat in this dish.
