If you want a fast side dish that is also hot, you can cook up this vegetable and chorizo side dish. The mushrooms and celery provide a mix of textures while the chorizo provides fat and all the seasoning you need. The arugula adds a little green with a peppery flavor to it.

Ingredients

  • 3 ½ ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • ½ ounce celery
  • 3 ounce ground chorizo by quijote
  • 1 ounce arugula, raw

Instructions

  1. Combine quartered mushrooms, diced celery, and ground chorizo in a pan over medium heat. Break the sausage up in the pan occasionally as you cook with a lid on. Cook for about 6-7 minutes – until the chorizo is crumbly and the mushrooms and celery are tender enough to have absorbed the flavors of the chorizo.
  2. Turn the heat down to low and stir in chopped arugula. Stir until the arugula has just wilted. Serve immediately while hot.
