About
If you want a fast side dish that is also hot, you can cook up this vegetable and chorizo side dish. The mushrooms and celery provide a mix of textures while the chorizo provides fat and all the seasoning you need. The arugula adds a little green with a peppery flavor to it.
Ingredients
- 3 ½ ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
- ½ ounce celery
- 3 ounce ground chorizo by quijote
- 1 ounce arugula, raw
Instructions
- Combine quartered mushrooms, diced celery, and ground chorizo in a pan over medium heat. Break the sausage up in the pan occasionally as you cook with a lid on. Cook for about 6-7 minutes – until the chorizo is crumbly and the mushrooms and celery are tender enough to have absorbed the flavors of the chorizo.
- Turn the heat down to low and stir in chopped arugula. Stir until the arugula has just wilted. Serve immediately while hot.
