These quick and easy roasted leeks are part cooked until tender then roasted with a little olive oil and a generous helping of oozy cheddar cheese.
These make a great side dish for sharing, perfect served with roasted meats.
Ingredients
- 1 each leeks
- 1 tablespoon olive oil
- ½ cup, grated cheddar cheese
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Remove any outer leaves from the leek and cut away the tough ends. Slice the leek into three equal segments. Add to a pan of boiling water and simmer for 3 minutes until fork tender. Drain completely and set aside to steam dry.
- Once cool enough to handle, slice the leek segments in half and arrange in a small oven proof dish. Drizzle with olive oil and season with salt and pepper.
- Scatter over the grated cheese and transfer to the oven to bake for 10 minutes until the leeks are soft and the cheese is melted and golden.
