This cauliflower mash is delicious! It’s topped with creamy, stringy cheese and a dollop of fresh sour cream and fresh chives.
Ingredients
- 1 pound cauliflower rice
- 2 ounce cream cheese
- ¼ cup, grated parmesan cheese
- ¼ teaspoon coarse kosher salt by morton
- ½ cup, shredded queso chihuahua (chihuahua cheese)
- 1 tablespoon sour cream
- 1 tablespoon chives
Instructions
- Preheat an oven to 425 F. Microwave the cauliflower rice for about 5 minutes until warm and kernels separated. Place the rice, cream cheese, parmesan and salt into a food processor and blend until mixture is nice and creamy.
- Place in an oven safe bowl and spread smooth.
- Top with cheese.
- Bake for ~10 minutes until cheese is melted and edges are turning brown.
- Top with cold sour cream and fresh chopped chives. Serve immediately!
