This refreshing salad is loaded with crisp low carb vegetables, creamy avocado, crunchy sunflower seeds and a citrusy dressing.
This makes a great side salad, perfect to accompany a protein of your choice.
Ingredients
- 4 medium – 3/4" to 1" diameter radish, raw
- 2 small – 3" long scallions
- 2 cup iceberg lettuce
- 2 tablespoon olive oil
- 1 tablespoon parsley, fresh
- 1 each avocado
- 1 tablespoon red onion
- 1 medium – stalk – 7 1/2" to 8" long celery
- 1 tablespoon, whole pieces sunflower seeds
- 1 teaspoon lemon juice
- 1 teaspoon lime juice, fresh
- ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Roughly chop the lettuce, dice the avocado and celery and thinly slice the scallions, bell pepper and radishes. Add to a large serving bowl along with the parsley, red onion and sunflower seeds. Season with salt and pepper and toss to combine.
- Whisk together the olive oil, lemon and lime juice. Drizzle over the salad and toss before serving.
