Chicken Avocado Boats With Minted Tahini Yogurt And Pine Nuts

These flavorsome avocado boats are loaded with creamy yogurt, rich tahini, shredded chicken, aromatic mint, and topped with crunchy pine nuts.

These make for a simple snack in between meals.

Ingredients

  • 1 ½ ounce rotisserie chicken
  • 2 teaspoon tahini
  • 1 tablespoon yogurt
  • 1 tablespoon peppermint, fresh
  • 1 teaspoon lemon peel or zest raw
  • 2 teaspoon, whole pieces pine nuts
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the avocado in half, lengthways and remove the stone.
  2. Finely chop the mint leaves and add to a mixing bowl, along with the yogurt, tahini and lemon zest.
  3. Roughly shred the chicken into the bowl, season, and stir well to coat in the dressing.
  4. To serve, divide the chicken mixture evenly between the two avocado halves and scatter with pine nuts.
