I love peppermint flavored things around Christmas time and what better way to enjoy it than in fudge! This super creamy, indulgent treat is delightfully refreshing thanks to the peppermint flavor. Simply mix all the ingredients (only 4 ingredients!) together in a bowl, just be sure to use coconut oil in the solid state not liquid state when creaming the ingredients together.

Ingredients

  • 1 cup coconut oil
  • ¼ cup the ultimate icing sugar replacement by swerve
  • ¼ cup special dark cocao by hershey's
  • 1 Teaspoon pure peppermint extract

Instructions

  1. Cream the coconut oil and powdered erythritol together in a small bowl using a hand mixer. You must use solid coconut oil to make this work!
  2. Add the cocoa powder and peppermint extract and blend until just combined.
  3. Line a 3 cup rectangular glass container with parchment paper, cutting the paper to size to allow the paper to hang over the sides.
  4. Scoop mixture into the lined glass container and place in the fridge until firm about 1 hour. Use a paring knife and run the knife around the edges to loosen the fudge and use the parchment paper to pull the fudge out. Let the fudge come up to temperature for a few minutes. If you cut the fudge too soon, it will crumble. When serving, bring the fudge out of the fridge for a few minutes before enjoying!
