This Keto Pico de Gallo includes all the classic flavors of the traditional salsa with a splash of olive oil for a dose of healthy fats.

Perfect for topping fajitas, steaks or with our keto butterflied lime chicken and pico de gallo.

Ingredients

  • 2 medium – 2 3/5" diameter tomato raw (includes cherry, grape, roma)
  • 2 teaspoon lime juice, fresh
  • 1 tablespoon olive oil
  • ½ small red onion
  • ½ cup, chopped cilantro
  • ¼ each – approx 4" – 6" long hot chili peppers, red, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly dice the tomatoes and onion and add to a mixing bowl.
  2. De-seed and finely chop the chilli and roughly chop the cilantro. Add to the bowl with the tomato and onion.
  3. Season and drizzle over the lime juice and olive oil. Toss well to combine.
