These festive meatballs are a great holiday snack option or perfect for party food!
The meatballs are packed with sweet dried cranberries, crunchy walnuts and aromatic herbs and served with a sweet cranberry jam for dipping.
Ingredients
- 9 ounce ground pork
- 2 teaspoon sage leaves-fresh
- 2 teaspoon olive oil
- 2 teaspoon rosemary, fresh
- 2 tablespoon water
- 1 tablespoon, grated parmesan cheese
- 1 tablespoon, halves walnuts
- 1 tablespoon, whole pieces cranberries, dried (craisins)
- 1 cup, whole pieces cranberries, fresh
- 1 tablespoon maple flavored syrup by lakanto
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
- Finely chop the cranberries and fresh herbs. Add them to a mixing bowl along with the ground pork, Parmesan, olive oil, salt and pepper. Use your hands to mix together well.
- Divide the mixture evenly into 12 meatballs.
- Transfer the meatballs to the lined oven tray and bake for 18 minutes or until completely cooked through.
- Whilst the meatballs are cooking, add the cranberries, syrup and water to a small pan. Bring the mixture to a boil and crush the cranberries with a fork.
- Reduce to a simmer and cook for a further 2-3 minutes until you have a thick jam.
- Skewer the meatballs with cocktail sticks.
- Serve the meatballs alongside the cranberry jam.
