This quick and easy low carb spaghetti is loaded with oozy cheddar cheese, aromatic chives and topped with crispy bacon.
This is a great option for weeknights when you are short on time!
Ingredients
- 2 slice – 6" long bacon
- 1 large zucchini
- 1 clove garlic
- 1 tablespoon chives, raw
- ½ cup, grated cheddar cheese
- ½ tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Peel the skin from the zucchini and discard. Peel the flesh into long ribbons.
- Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp. Remove the bacon from the pan, leaving the bacon fat in the skillet. Set aside.
- Crush the garlic and add to the skillet with the bacon fat and add the zucchini ribbons. Cook for 3-4 minutes or until tender.
- Remove the skillet from the heat. Finely chop the chives and add to the skillet along with the cheese, salt and pepper. Stir through the zucchini spaghetti to combine.
- Crumble over the cooked bacon to serve.
