This simple spiced cabbage is cooked with tender bacon and onion until soft and caramelized.
This is a great side to accompany roasted chicken or grilled pork.
Ingredients
- 4 slice – 6" long bacon
- 2 cup cabbage
- 1 clove garlic
- 1 teaspoon hot chili pepper, dried, with seeds
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- ¼ medium – 2 1/2" diameter white onion
- ½ cup chicken broth, bouillon or consomme, ready-to-serve can
Instructions
- Melt the butter in a skillet over low/medium heat. Thinly slice the onion and add to the pan, sweating gently until tender.
- Crush the garlic and dice the bacon. Add to the pan along with the chili flakes and stir well to combine. Cook until the bacon and onions are golden brown.
- Thinly slice the cabbage and add to the pan with the olive oil. Stir well and cook over a medium heat for 4-5 minutes until tender and starting to caramelize.
- Add the stock and simmer for 5-6 minutes until the cabbage is soft and the liquid has evaporated. Serve hot.
