These sweet and creamy scrambled eggs are mixed with tangy goats cheese and crispy maple bacon pieces.

This makes a great breakfast option or light lunch served with salad.

Ingredients

  • 3 medium raw egg
  • 2 slice – 6" long bacon
  • 2 tablespoon goat cheese, soft
  • ½ tablespoon butter
  • ½ tablespoon maple flavored syrup by lakanto
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Slice the bacon into 1.5 inch strips and arrange across the lined baking tray. Brush the syrup over the bacon pieces. Transfer to the oven for 10-12 minutes until crisp and caramelized.
  3. Whilst the bacon is cooking, add the eggs to a bowl, season to taste and beat together.
  4. Melt the butter in a saucepan over a low/medium heat and add the beaten egg. Allow to settle for a moment then scramble with a spoon.
  5. Once the egg is cooked, crumble in the goats cheese and bacon and stir through to serve.
