This simple salad is loaded with flavor from sweet roasted pepper, salty capers, peppery arugula and our creamy tonnato dressing.

Ingredients

  • 2 cup, cut pieces arugula
  • 2 servings (per heaped tablespoon) keto tonnato dressing
  • 1 tablespoon olive oil
  • ⅔ cup roasted red peppers in brine by kroger
  • ½ tablespoon, whole pieces capers
  • ½ tablespoon, chopped parsley

Instructions

  1. Add the arugula, capers and olive oil to a large salad bowl and toss to combine.
  2. Slice the roasted peppers into thin strips and arrange over the salad.
  3. Spoon the tonnato dressing over the top of the salad and scatter with fresh chopped parsley to serve.
