These cauliflower skewers are tossed in Parmesan cheese and aromatic chives then wrapped in bacon and baked until crisp and caramelized.

Perfect as a side, snack or even lunch served with a green salad!

Ingredients

  • 12 slice – 6" long bacon
  • 2 tablespoon, grated parmesan cheese
  • 1 small – head – 4" diameter cauliflower
  • 1 teaspoon chives, dried or dehydrated
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cover 4 wooden skewers in water to soak.
  2. Dice the cauliflower into 12 even sized florets. Add to a pan of boiling water and boil for 3 minutes. Drain and immediately submerge in ice cold water to stop the cooking process. Drain and pat dry.
  3. Preheat the oven to 400 degrees Fahrenheit.
  4. Add the cauliflower florets to a mixing bowl and sprinkle over the Parmesan, chives, salt and pepper. Drizzle with the olive oil and use your hands to rub the seasonings into the cauliflower.
  5. Wrap each individual floret in a slice of bacon then add three bacon wrapped florets to each skewer.
  6. Arrange the skewers across a shallow oven tray and bake for 20-25 minutes until the cauliflower is tender and the bacon is crisp, turning halfway through.
