They’re a little different than what you might see served at Thanksgiving or Christmas. There’s no fried onion, no processed canned soup, and no nuts! However, these mini casseroles still have tender insides with a crunchy topping. Heavy cream and cream cheese have been added to make this recipe Keto. Bacon bits sprinkled on top is what will make everyone grab for these at dinner time. Please note that this recipe does include the spice, nutmeg. If you have any seed allergies, you may want to omit this spice or avoid making this recipe.

I’m Using Fresh Green Beans

This green bean casserole recipe uses frozen green beans. When thawed, using frozen green beans will cut down on your cooking time significantly. However, you can prepare fresh green beans for the same result. Cook whole green beans in boiling water until they turn bright green. Then, transfer the green beans to an ice bath to cool quickly. Once the green beans are cooled, you can chop them into small pieces like what you’d get inside a frozen bag. Using fresh green beans will result in a slightly firmer mini casserole, but be careful not to overcook them when they’re boiling. Otherwise, the green beans will become too soft in the oven later.

Ingredients

  • 6.67 ounce frozen green beans by kroger
  • 2 ounce cream cheese
  • 3 slice – 6" long bacon
  • 5 large raw egg
  • 1 tablespoon cream heavy whipping
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ⅛ teaspoon nutmeg ground

Instructions

  1. Preheat your oven to 350 degrees. Line a 6-count muffin tin with paper liners. Make sure your frozen green beans are thawed completely before using them. Chop them up into small pieces if they’re not already chopped. If you only have fresh green beans available, instructions for preparing and using them are outlined in the heading paragraphs to this recipe. Fill each paper liner with 1 oz of thawed green beans.
  2. Cut cold cream cheese up into cubes and arrange them on top of the green beans. Two or three cubes of cream cheese per serving are best. Cook strips of bacon to extra crispy. Once the bacon has cooled, cut the bacon up into bits. Sprinkle the cooled bacon bits over the tops of the green beans and cream cheese. For this recipe, it’s okay if the ingredients are piled a little higher than the paper liners.
  3. Whisk together the eggs, heavy cream, salt, pepper, onion powder, and nutmeg together in a bowl or large measuring cup. Pour the egg mixture over the casserole ingredients evenly until each paper liner is filled. Let the egg filling settle before putting the muffin tray into your oven. Bake the mini casseroles for 25-27 minutes. After the egg batter rises in the oven, you can let it settle down while it cools before serving.
