This delicious dish is packed with flavor from the zesty tang of lemon to the creaminess of cheese, and just a hint of aromatic basil.
The chicken is foil baked so it steams gently as it cooks, retaining its moisture and all the flavors. Perfect served with a fresh green salad or with a side of roasted asparagus.
Ingredients
- 2 large breast (yield after cooking, bone and skin removed) chicken breast
- 5 ounce cream cheese
- 1 clove garlic
- ½ cup spinach raw
- ¼ cup basil fresh
- ½ lemon yields lemon juice raw
- 1 tablespoon lemon peel raw
- ¼ teaspoon salt
- 0.2 teaspoon black pepper
Instructions
- Preheat the oven to 390 degrees Fahrenheit and lay a large piece of foil across a shallow oven tray.
- Add the cream cheese, half the lemon zest, the spinach, crushed garlic and basil to a mixing bowl.
- Season generously and stir well to combine.
- Lay the chicken breasts on a clean work surface and use a sharp knife to score down the center of each breast, making a pocket in the center.
- Spoon the mixture evenly between each chicken breast, filling the pocket completely.
- Season each chicken breast with salt and pepper and the remaining zest.
- Lay the chicken breasts on the foil and drizzle with the lemon juice. Fold the excess foil over and around the chicken forming a loose parcel.
- Transfer to the oven to bake for 23-25 minutes, until the chicken is cooked through.
