This keto take on Aji sauce is rich with aromatic coriander, creamy mayonnaise, zesty lime and spicy peppers.
Perfect served as a dip or as a coating for baked chicken.
Ingredients
- 4 tablespoon olive oil
- 3 tablespoon mayonnaise
- 2 medium – 4 1/8" long scallions
- 1 ½ cup, chopped coriander leaf, fresh
- 1 regular – approx 2" long jalapeno peppers, raw
- 1 clove garlic
- 1 tablespoon lime juice, fresh
- 1 teaspoon lime zest
- 1 teaspoon apple cider vinegar
- 1 tablespoon, grated parmesan cheese
Instructions
- De-seed the pepper and finely slice the scallions. Add to a food processor along with the mayonnaise, olive oil, cilantro, garlic, lime juice, zest, apple cider vinegar and Parmesan.
- Blend until smooth and well combined. Cover and refrigerate until ready to serve.
