Light, zesty and totally refreshing, this cucumber salad is the ultimate summer side.
Perfect to accompany grilled meats, this salad comes together in no time at all and is a great addition to the BBQ table.
Ingredients
- 2 tablespoon creme fraiche
- 2 medium – 4 1/8" long scallions
- 2 tablespoon dill weed, fresh
- 2 teaspoon lemon peel
- 1 tablespoon mayonnaise
- ½ large – 8 1/4" long cucumber
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Slice the cucumber into thin discs – roughly ¼ cm wide. Add the cucumber discs to a mixing bowl along with the salt and stir well to combine. Set aside for 15 minutes allowing the cucumber to release any excess liquid.
- Whilst the cucumber is resting, finely slice the scallions and roughly chop the dill. Add the crème fraiche, mayonnaise, lemon juice, lemon zest, scallions, dill and black pepper to a mixing bowl. Stir well to combine.
- Drain any excess water from the sliced cucumber and blot with kitchen paper to absorb any further moisture and the salt.
- Spoon the creamy dressing over the cucumber discs and stir well to coat. Refrigerate until ready to serve.
