This creamy lemon mousse is prepared with soft cream cheese, whipped heavy cream and zesty lemon.
This is a quick to prepare but decadent dessert, perfect for a post dinner treat.
Ingredients
- 3 ½ ounce cream cheese spread
- 2 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ cup heavy cream
- ¼ cup 100% pure erythritol by now
Instructions
- Add the erythritol, cream cheese, lemon juice and vanilla to a food processor. Blend until smooth and creamy.
- Add the cream to a mixing bowl and whisk vigorously until thick and fluffy. Alternatively you can use a stand mixer with whisk attachment to whip the cream.
- Carefully fold the lemon cream cheese mixture into the whipped cream until well combined. Refrigerate until ready to serve.
