These sweet shallots are tossed with maple flavored syrup, balsamic vinegar and fresh rosemary then roasted until tender and caramelized.

These make a great side dish to roasted meats or added to salads.

Ingredients

  • 4 Shallot shallot
  • 1 teaspoon rosemary, fresh
  • 1 ½ tablespoon olive oil
  • 1 tablespoon maple flavored syrup by lakanto
  • ½ tablespoon balsamic vinegar
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Peel the shallots and slice in half lengthwise. Arrange across a shallow oven tray and drizzle over the oil, syrup, and vinegar. Finely chop the rosemary and sprinkle over the shallots and season. Use your hands to rub the seasonings into the shallots.
  3. Transfer to the oven to roast for 20 minutes until soft and caramelized, turning halfway through.
