Stuffed chicken is a delicious and easy dinner. Simply make a slice into the side of a chicken breast and fill! This chicken is stuffed with broccoli and feta. I used frozen broccoli florets and steamed them until tender to save even more time. This is a great dish to double or triple so that you have multiple meals!

Ingredients

  • 1 small breast (yield after cooking, bone and skin removed) chicken breast
  • ½ cup, flowerets frozen broccoli
  • 1 wedge (1.33 oz) feta cheese
  • 1 ½ tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ tsp, leaves spices oregano dried
  • ¼ tsp, leaves spices basil dried

Instructions

  1. Steam broccoli in a small pot until you can easily pierce it with a fork.
  2. Clean and trim the chicken breast. Use a sharp knife to make a slit in the side of the breast so that it becomes a pocket for the filling.
  3. Mix together the olive oil, salt, garlic, oregano, and basil. Spoon half of the mixture on the chicken breast and rub it all over the chicken. Roughly chop the broccoli and feta and add it to the remaining olive oil mixture. Stuff the chicken breast with the broccoli mixture. If needed, use a toothpick or two to securely close the chicken.
  4. Bake the chicken at 375 degrees Fahrenheit for 25-30 minutes, or until the chicken reads 165 degrees on a meat thermometer. The time with vary slightly based on how large the breast is. Allow to rest for 10-15 minutes before slicing and serving.
