These simple scrambled eggs are combined with a zesty and aromatic guacamole.
Perfect for adding a bit of variety to breakfast time or even served as a lunch option with salad.
Ingredients
- 3 medium raw egg
- 1 each avocado
- 1 tablespoon lime juice, fresh
- 1 tablespoon cilantro
- 1 large scallions
- 1 tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Peel the avocado and add the flesh to a mixing bowl. Slice the scallion and roughly chop the cilantro and add to the bowl along with the lime juice. Roughly mash together with a fork to combine.
- Add the eggs to a mixing bowl with the salt and pepper and beat together.
- Heat the oil in a saucepan over a medium heat and add the beaten egg. Leave to settle and start cooking for a moment then scramble with a wooden spoon.
- Once the eggs are just cooked to preference, add the guacamole and stir through to serve.
