These simple scrambled eggs are combined with a zesty and aromatic guacamole.

Perfect for adding a bit of variety to breakfast time or even served as a lunch option with salad.

Ingredients

  • 3 medium raw egg
  • 1 each avocado
  • 1 tablespoon lime juice, fresh
  • 1 tablespoon cilantro
  • 1 large scallions
  • 1 tablespoon olive oil
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the avocado and add the flesh to a mixing bowl. Slice the scallion and roughly chop the cilantro and add to the bowl along with the lime juice. Roughly mash together with a fork to combine.
  2. Add the eggs to a mixing bowl with the salt and pepper and beat together.
  3. Heat the oil in a saucepan over a medium heat and add the beaten egg. Leave to settle and start cooking for a moment then scramble with a wooden spoon.
  4. Once the eggs are just cooked to preference, add the guacamole and stir through to serve.
