These chicken breasts are loaded with flavor and texture from tangy Parmesan, aromatic basil, sweet tomatoes and crunchy pine nuts.
Perfect served with a green salad or side of buttered green beans.
Ingredients
- 4 piece sundried tomatoes packed in oil drained
- 4 slice – 6" long bacon
- 2 medium – split chicken breast, skin removed before cooking
- 2 teaspoon, whole pieces pine nuts
- 1 tablespoon basil, fresh
- ¼ cup, grated parmesan cheese
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Finely chop the tomatoes and add to a mixing bowl with the Parmesan, basil, pine nuts and pepper. Mix well to combine.
- Slice across the side of the chicken breasts to create a pocket, taking care not to cut all the way through.
- Divide the Parmesan mixture evenly between the two chicken breasts, packing the mixture in tightly.
- Seal the chicken breasts together and wrap each with two strips of bacon to secure the filling inside.
- Transfer to the oven to bake for 23-25 minutes or until completely cooked through and golden brown.
