These quick and easy chicken thighs make a great protein option for lunch or dinner. Our tasty low carb recipe is prepared with skin-on, bone-in chicken thighs, harissa paste, lemon juice, low carb maple-flavored syrup and olive oil. The thighs are simply basted in the spicy dressing before being part-baked, then basted again and baked until golden and caramelized.

Can I Use a Different Cut of Chicken?

We have used thighs for this Keto chicken recipe. If preferred, you could swap the thighs for skin-on, bone-in chicken breasts, drumsticks or wings. Please be sure to adjust your cooking times and macros accordingly to account for different cuts of meat.

Serving Suggestions

These spicy Keto chicken thighs make a great low carb lunch or dinner option. The thighs are perfect served with a low carb cauliflower couscous or a portion of buttery cauli mash. Alternatively, the thighs would be delicious served with a simple side salad and a creamy low carb slaw.

Ingredients

  • 4 medium chicken thigh with skin
  • 2 teaspoon maple flavored syrup
  • 2 teaspoon lemon juice
  • 2 teaspoon ingredients harissa paste
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Add the harissa paste, low carb maple syrup, lemon juice and olive oil to a small bowl. Mix well to combine.
  2. Arrange the chicken pieces across a shallow oven tray and season with salt and pepper. Baste the chicken pieces in half the marinade. Transfer to the oven to bake for 25 minutes.
  3. Remove the chicken thighs from the oven. Brush the remaining harissa sauce over the chicken thighs. Return to the oven for a further 10 minutes or until the chicken is entirely cooked through and the skin is crisp and golden. Serve with your preferred low carb sides.
