Perfectly seasoned cod fillets are a delicious dinner. This fajita-inspired recipe uses a mix of southern spices and a handful of juicy peppers and fresh cilantro. A squeeze of lime at the end pull these Tex-Mex flavors together. When baking, you can place your foil packet on a sheet tray in the oven to avoid over cooking.   • 4 oz fish cod atlantic raw
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ½ teaspoon onion powder
  • ½ teaspoon cumin, ground
  • ¼ teaspoon cayenne
  • 1 clove garlic
  • 1 ½ ounce red bell peppers, raw
  • 1 tablespoon, chopped cilantro
  • 1 wedge – juice from one wedge or slice lime juice, fresh

Instructions

  1. Preheat an oven to 350 degrees. Lay the cod fillet on a clean, flat surface. If your cod fillet is full length, you may want to cut it into two short pieces for easier handling. Sprinkle the salt, pepper, cumin, cayenne, and onion powder over the fish.
  2. Lay down a sheet of aluminum foil that is large enough to wrap around your cod fillet. Spray it lightly with pan spray, then place the cod down in the center of the foil. Smash the garlic clove and place it in the center of the fish. Slice the bell pepper and chop the cilantro, and arrange these ingredients over the fish.
  3. Wrap the foil around the ingredients so it can be easily opened for serving later. Place the cod in a center rack of the oven and bake for 35 minutes. The cod will become flaky and tender, slightly golden, and the peppers will soften in their juices.
  4. Serve the flaky cod with a wedge of lime. You can garnish with additional cilantro at your discretion.
