This recipe is just like the Carb Manager Cloud Chips, but expanded into one of everyone’s favorite flavors! These loaded chips are packed with baked potato goodness: bacon bits, cheddar cheese, and fresh chives. They will totally crush your craving for something crunchy and salty.

Ingredients

  • 2 slice – 6" long bacon
  • 2 large raw egg, white
  • ¼ cup, shredded cheddar cheese, natural
  • 1 tablespoon, cut pieces chives

Instructions

  1. Preheat an oven to 325 degrees and lightly spray a 12-count muffin tin with pan spray. In a small pan, cook your bacon until crispy. Once cooled, chop the bacon into fine bacon bits. Set this aside.
  2. In a stand mixer, whip your egg whites to stiff peaks. Gently whip in the cooled bacon bits, cheddar cheese, and chopped chives.
  3. Use a tablespoon measurer to scoop 1 TB of egg mixture into each muffin tin. Evenly disperse the remaining mixture into each muffin tin. Spread the mixture to create flat discs in the muffin tins.
  4. Bake the tray for 18 minutes or until the egg whites are dry and the edges are golden brown and crispy.
