These lettuce cups are packed with an Asian inspired slaw and sesame coated shrimp.
This is a great option for a quick and easy lunch, ideal for meal prepping!
Ingredients
- 2 inner (small) leaf romaine lettuce
- 1 cup shrimp, cooked from fresh
- 1 tablespoon mayonnaise
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon lime juice, fresh
- 1 teaspoon lime zest
- 1 teaspoon, chopped red onion
- 1 tablespoon, chopped coriander leaf, fresh
- ½ tablespoon, whole pieces sesame seeds
- ¼ cup, chopped red cabbage
- ¼ cup, shredded green cabbage
Instructions
- Finely slice the cabbage and add to a mixing bowl along with the red onion.
- Add the mayonnaise, sesame oil, soy sauce and lime zest. Mix everything together well to combine.
- Add the shrimp to a mixing bowl along with the lime juice and sesame seeds. Stir well to combine.
- Divide the slaw mixture evenly between the two lettuce leaves.
- Top with the sesame shrimp.
- Scatter with fresh cilantro to serve.
