The chocolate mug cake is popular on this site, so I wanted to offer a paleo version for those on the diet! Enjoy.

Ingredients

  • 1 tablespoon coconut oil
  • 4 pieces unsweetened baking chocolate bar by baker's
  • 2 tablespoon almond flour
  • 4 tablespoon the ultimate icing sugar replacement by swerve
  • 1 teaspoon 100% cocoa special dark by hershey's
  • ½ teaspoon baking powder
  • 1 large raw egg
  • ¼ teaspoon vanilla extract

Instructions

  1. Combine coconut oil and bittersweet chocolate together. Microwave for 30 seconds. Stir, then give it an additional 20-30 seconds as needed until all melted.
  2. Add almond flour, Swerve, cocoa powder, a pinch of salt and baking powder. Stir.
  3. Add egg and vanilla. Stir. Microwave for 50-60 seconds. Using lesser time for a more moist cake. Let stand for 1 minute before eating. Dust with Swerve.
