The chocolate mug cake is popular on this site, so I wanted to offer a paleo version for those on the diet! Enjoy.
Ingredients
- 1 tablespoon coconut oil
- 4 pieces unsweetened baking chocolate bar by baker's
- 2 tablespoon almond flour
- 4 tablespoon the ultimate icing sugar replacement by swerve
- 1 teaspoon 100% cocoa special dark by hershey's
- ½ teaspoon baking powder
- 1 large raw egg
- ¼ teaspoon vanilla extract
Instructions
- Combine coconut oil and bittersweet chocolate together. Microwave for 30 seconds. Stir, then give it an additional 20-30 seconds as needed until all melted.
- Add almond flour, Swerve, cocoa powder, a pinch of salt and baking powder. Stir.
- Add egg and vanilla. Stir. Microwave for 50-60 seconds. Using lesser time for a more moist cake. Let stand for 1 minute before eating. Dust with Swerve.
