This simple yet tasty lunch uses sliced chicken in place of carb heavy wraps and is loaded with a flavorsome egg mayonnaise.

These are ideal for lunches alongside a green salad or served individually as a snack between meals.

Ingredients

  • 4 slice chicken slices
  • 2 large hard boiled egg
  • 2 teaspoon, cut pieces chives
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly chop the eggs and finely chop the chives. Add to a mixing bowl with the mayonnaise, mustard, salt and pepper. Mix well to combine.
  2. Divide the egg mayo evenly between the four chicken slices, creating a thick strip close to one edge.
  3. Roll the chicken up around the egg mayonnaise so that the edges overlap, securing the filing in a tight tube. Serve immediately.
