This simple yet tasty lunch uses sliced chicken in place of carb heavy wraps and is loaded with a flavorsome egg mayonnaise.
These are ideal for lunches alongside a green salad or served individually as a snack between meals.
Ingredients
- 4 slice chicken slices
- 2 large hard boiled egg
- 2 teaspoon, cut pieces chives
- 1 tablespoon mayonnaise
- 1 teaspoon mustard
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Roughly chop the eggs and finely chop the chives. Add to a mixing bowl with the mayonnaise, mustard, salt and pepper. Mix well to combine.
- Divide the egg mayo evenly between the four chicken slices, creating a thick strip close to one edge.
- Roll the chicken up around the egg mayonnaise so that the edges overlap, securing the filing in a tight tube. Serve immediately.
