This simple broccoli rice dish offers an alternative to cauliflower rice.
Quick and easy to prepare, this makes a great side for chicken or fish or a base for lunch meal prepping.
Ingredients
- 4 Cup broccoli florets
- 2 tablespoon olive oil
- 2 teaspoon lemon juice, fresh
- 1 teaspoon lemon peel or zest raw
- 1 tablespoon, whole pieces pine nuts
- 1 clove garlic
- ¼ teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Trim the tops of the broccoli florets using kitchen scissors to create small rice sized grains. You should have around two cups of rice.
- Add the pine nuts to a dry pan over a low heat and toast for a minute or two until lightly golden. Set aside.
- Heat a tablespoon of olive oil in a small pan over a low/medium heat. Finely slice the garlic and add to the pan, sweating until tender.
- Add the broccoli grains, lemon juice, remaining olive oil, lemon zest, salt and pepper and stir well to combine. Cook for just a minute or two until the broccoli is hot through.
- Top the rice with the toasted pine nuts to serve.
