Bruschetta is a classic and favorite appetizer or snack. While traditional bruschetta can be heavy on the carbohydrates, this version with a Mediterranean twist is healthy and satisfying! Each bite is crunchy, juicy, and very fresh.
Ingredients
- 1 ½ ounce black olives
- ½ ounce spinach
- 2 ounce red bell peppers, raw
- 1 ½ tablespoon extra virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon lemon juice
Instructions
- Finely chop the olives, spinach, and bell pepper. Combine these ingredients with all remaining ingredients in a bowl.
- Serve immediately. Some serving suggestions are raw endive leaves, Carb Manager Bacon Chips, or Carb Manager Cheese Crisps.
