This simple keto salad is packed with fats and flavor from crispy bacon, tangy cheddar cheese and tender tuna flakes.
This makes a great lunch salad, perfect for lunch boxes!
Ingredients
- 2 slice – 6" long bacon
- 2 ounce canned tuna
- 2 cup arugula
- 1 teaspoon lemon juice, fresh
- ½ each avocado
- ¼ small red onion
- ¼ cup, grated cheddar cheese
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat half a tablespoon of olive oil in a skillet over a medium heat. Roughly chop the bacon and pan fry until cooked through and crisp. Set to one side to cool.
- Whilst the bacon is cooking, thinly slice the onion and avocado. Add to a mixing bowl with the arugula, remaining olive oil, lemon juice, salt and pepper. Toss well to combine.
- Add the cooled bacon, cheddar cheese and tuna to a mixing bowl and stir together.
- Scatter the bacon, cheese and tuna over the salad and toss to combine before serving.
