This flavorsome salad is loaded with crisp lettuce, salty capers, juicy red bell pepper, creamy avocado, aromatic basil and flakes of salmon.
This is a great lunch option or light dinner.
Ingredients
- 3 ½ ounce canned salmon
- 2 cup iceberg lettuce
- 2 tablespoon olive oil
- 2 teaspoon capers
- 1 small red bell peppers, sweet, raw or blanched, marinated in oil mixture
- 1 tablespoon lemon juice
- 1 tablespoon basil, fresh
- ½ each avocado
- ¼ small red onion
- ¼ medium cucumber
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Roughly tear the lettuce, thinly slice the onion and bell pepper, dice the avocado and roughly chop the cucumber. Add to a large serving bowl along with the capers, and tear in the fresh basil.
- Flake in the salmon and season with salt and pepper.
- Drizzle over the olive oil and lemon juice and toss to combine.
