These simple but flavorsome pinwheels are loaded with a sundried tomato flavored cream cheese with fresh parsley, garlic and a hint of lemon.
Perfect for snacking and sharing!
Ingredients
- 6 piece tomatoes sun dried or sundried packed in oil
- 1 tablespoon cream cheese
- 1 tablespoon parsley, fresh
- 1 clove garlic
- 1 teaspoon lemon peel or zest raw
- ½ small – 6 3/8" long cucumber, raw, with peel
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Peel the outer skin from the cucumber and discard. Peel the cucumber flesh into 8 wide strips.
- Add the cream cheese, 1 small garlic clove, the sundried tomatoes, parsley, lemon zest, salt and pepper to a food processor. Blend to form a semi smooth paste.
- Divide the cream cheese mixture between the cucumber strips, filling the center of each lengthwise.
- Carefully roll each strip of cucumber up around the filling to create your pinwheels. Refrigerate until ready to serve.
