These griddled lamb chops are packed with flavor from aromatic garlic, zesty lemon and cooked until lightly charred on the outside and perfectly tender in the center.

Ingredients

  • 4 servings (per tablespoon) keto salsa verde
  • 4 medium lamb chops
  • 2 tablespoon olive oil
  • 2 clove garlic
  • 1 tablespoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Mince the garlic and add to a mixing bowl with the lamb chops, olive oil, zest, salt and pepper. Use your hands to rub the seasoning into the meat. Set aside for 10 minutes to marinade.
  2. Lightly oil a griddle pan over a medium/high heat. Add two of the lamb chops and cook until golden brown on one side – about 4/5 minutes. Turn and continue to griddle the second side until golden brown and the lamb is cooked through to taste. Repeat with the remaining chops.
  3. Spoon a quarter of the salsa verde over each chop to serve.
