These jumbo shrimp skewers offer a spicy kick from red chilli, complemented perfectly by a twist of zesty lime and aromatic cilantro.

These make an excellent quick and easy lunch, paired with a simple side salad and our keto avo lime mayo.

Ingredients

  • 5 ½ ounce jumbo shrimp by publix
  • 2 tablespoon cilantro
  • ½ fruit (2 in. dia) lime
  • ½ pepper red hot chili peppers
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ tablespoon olive oil

Instructions

  1. Soak 4 wooden kebab skewers in water for 20 minutes to prevent catching in the oven.
  2. Finely chop and de-seed the chilli and finely chop the cilantro. Add both to a large mixing bowl with the jumbo shrimp, olive oil, lime juice and the zest of ½ the lime.
  3. Use your hands to combine the ingredients together thoroughly, cover and leave to marinade in the fridge for 15 minutes.
  4. Divide the shrimp evenly, then thread onto the four soaked skewers.
  5. Heat the oven grill to high and grill for 3-4 minutes on each side until piping hot through. Serve with a simple salad and our keto avo mayo dressing.
